Chocolate bowl filled with chocolate mousse, Fifty, fabulous & finally free

Chocolate Mousse

Ingredients:

2 cups heavy whipping cream

1 cup chocolate syrup (for extra richness I like to use Hershey’s Special Dark)

1 TBSP Pure Vanilla Extract

Directions:

Using a home whipped cream maker, combine ingredients until thoroughly mixed then add CO2 cartridges (you may want to use 2 but let the mixture chill in between adding them)

Alternative- If you are using an electric mixer, blend whipping cream and vanilla extract then slowly drizzle chocolate syrup in as whipped cream begins to form stiff peaks.

Chill and serve, garnish with fresh berries.

Chocolate Bowls

Directions:

Melt 8 oz. milk chocolate chips and 8 oz. white chocolate chips

Pour carefully into bowl molds, (taking care not to over fill), chill 30 minutes and then gently remove – these are an easy, beautiful addition to any meal.

*Molds for these are available at most discount retailers or any hobby / craft store.

You can fill the bowls with our chocolate mousse (as pictured) or use fresh berries and whipped cream.


Football Rice Crispie Treat, 50, Fabulous & Finally Free.com

Last year I came up with this recipe just a couple of hours before we headed to my friend’s annual super bowl party. I had all of the ingredients in my pantry and decided to give it a try. Imagine my surprise at how well received it was - the whole thing was gone before halftime! I was bombarded with requests for the recipe and promised to make it my annual contribution. I love fun and easy things to make and this football is both. Some variations would include using brown food coloring for those who don’t like chocolate (I’ve never tried this and you would need to adjust the cereal quantity slightly lower to allow for less marshmallow mixture) and using corn flakes instead of Rice Krispies. I love the corn flake version because it is a little easier to make, but both kinds taste great!

Football Rice Krispies Treat

Recipe:

1-cup butter

1 package of marshmallows (mini ones melt faster)

1 TBS vanilla extract

1 cup of chocolate chips - I prefer dark chocolate but any kind will work

6 1/2 cups of plain Rice Krispies or corn flakes

For Decoration:

Melt 1/2 cup white chocolate chips; pour into decorating bag (or just a plain Ziploc) cut the corner and pipe onto the football.

*To skip this step - purchase a small tube of white icing at the store - use the circle tip and pipe onto football.

Football:

Grease a large piece of waxed or parchment paper. Melt butter over medium heat in a large stockpot, when completely dissolved add marshmallows and vanilla. Once marshmallows are melted, add chocolate, stirring steadily so it doesn’t burn. **Very important** remove from heat before adding dry cereal - gently stir in cereal slowly so the marshmallow mixture coats evenly. Once mixture is combined turn onto prepared wax paper and using a greased spatula, shape into a football. Let shaped football cool for about 30 minutes, and then use white icing or melted white chocolate to decorate laces. Let cool completely before serving, cut into pieces and enjoy!

Doctor on Demand is a service that everyone should know about. They take some insurance plans but even for those of us without insurance, the fee is only $75. During this cold and flu season it is a lot easier to do a video visit with one of the physicians from DOD than to have to trek out for a much more costly visit to an urgent care or the ER. The way the company describes the video visits is, “Doctors use two main skills to diagnose most common medical conditions, looking and listening. Through Doctor on Demand, each provider will determine if a focused or more comprehensive medical history needs to be performed. Providers may recommend that you see a physician in person if he or she feels that is in your best interest.” The convenience of being able to see a doctor from the comfort of your own home cannot be underestimated, especially when you’re not feeling well.

I recently had a UTI while out of town and was able to get online and talk to a physician within 30 minutes; I had antibiotics within an hour and was feeling better the next morning. So much better than waiting hours in the ER!
