Pie & Blueberries, 50, fabulous & finally free

Quick & Easy Buttermilk Pie

I love how easy this is! Especially when I am scrambling to finish up wrapping presents before my guests arrive. I think this tastes a lot like Crème Brule. Everyone always loves it!

Ingredients:

  • 1 ½ cups sugar

  • 1 cup buttermilk (see buttermilk substitute recipe below)

  • 1/2 cup Bisquick or biscuit mix

  • 1/3 cup (5 1/3 tablespoons) butter, melted

  • 1 teaspoon pure vanilla extract

  • 3 eggs

Directions:

  • 1. Preheat oven to 350 degrees F.

  • 2. Grease a 9-inch pie pan.

  • 3. Combine all ingredients in a bowl and blend for 1 minute with a mixer.

  • 4. Pour mixture in to prepared pan.

  • 5. Bake for about 50 minutes or until toothpick inserted in the center comes out clean. Don’t over bake.

  • 6. Cool for 5 minutes.

  • 7. Serve with fresh blueberries or strawberries.

Buttermilk Substitute (because who actually keeps buttermilk in their fridge)

  • 1. Pour 1 cup of milk into a bowl or measuring cup

  • 2. Add 1-2 tablespoons of lemon juice OR vinegar to the milk.

  • 3. Stir to combine.

  • 4. Let stand 5 to 10 minutes at room temperature. When it is ready, the milk will be slightly thickened and you will see small curdled bits. This substitute will not become as thick as regular buttermilk; you will also not notice the curdled bits in your finished recipe.

  • 5. Use in place of buttermilk in any recipe that calls for it! Enjoy!

Advent Calendar with Christmas Tree in the background, 50, Fabulous & Finally Free.com

Loving Tradition

When my kids were born, I started the tradition of having an Advent Calendar. The tradition continues on even though everyone is grown and it’s still a family favorite. I am currently looking for a second Advent calendar so that each of my children will be able to carry on the tradition when they have their own families!

The kids would take turns and everyday a door of the advent calendar would be opened; each day there would be a different small gift inside of the calendar. When they were little, it might have been a small toy, candy, or maybe a dollar or two, now it is a pack of gum, Chap stick, an ornament, a Starbucks card or “their” favorite a Lottery Ticket. If the gift was too large, I would put a little note inside sending them on a hunt for the item, sometimes leaving notes in a couple of places, they still love this today!

If any of you have any great ideas, please email them to us at, mystory@fiftyfabulousandfinallyfree.com. We will pass them along - I am always looking for inexpensive and fun things to set aside for calendar presents!

Loving: A New Favorite Find

Being the organized freak that I am, I hate having to rummage through a drawer to find something... especially measuring spoons! These measuring spoons stack together with a magnet! They are double sided with two  different shapes for use with spice jars or liquids... I love them! These magnetic spoons stay organized in your drawer so they are always right where you need them. Made by Prep works/Progressive, these "Magnetic Measuring Spoons" are available at Amazon.
